Description
Very gently used knife, actually used 3x on an epicurean cutting board, but it’s just not the knife for me. There is a minor scratches on the blade as pictured, which actually came from using a special drying rack that I’ve since thrown away. . Blade has not been honed or sharpened. Edge is in new condition. I only ever hand washed it and cared for it like a baby.Manufacturer: Miyabi

Forged from FC61 stainless steel, each full-tang blade is touched by 46 artisans and is hand-honed to an exceptionally sharp 9.5–12 degrees. The Friodur2 hardening process improves the microstructure of the steel for improved cutting performance, corrosion resistance and durability—and the blades are polished to a stunning mirror finish. Sandblasted katana edges, a signature decorative pin and a hand-engraved logo add distinctive Japanese style to the minimalist design.
